BABY SPINACH & PEAR SALAD
Baby spinach small bunch
Pear 1 peeled cored and sliced
Pine nuts 2 tablespoons lightly toasted
Dressing
Lime juice (1 lime)
Balsamic vinegar 1 tablespoon
Olive oil 1 tablespoon
Mustard Dijon seeded 1 teaspoon
Wash spinach well and drain
Place spinach in serving bowl and top with pears then pine nuts
Dress and toss just prior to serving.
