BAKED BEETROOT

Water
3 to 4 beets
1 large orange
1 tablespoon and olive oil
2 teaspoons of fennel seed
1 teaspoon of black pepper
2 cups of red wine vinegar

Wash beets well in cold water
Place in an ovenproof dish with 1 cup of water with orange peel and orange juice
Bake for 45 minutes
Sprinkle seeds
Mix oil with vinegar and toss beet before serving.
