BETTE'S SWEET POTATO SOUP
1 tbs oil (or less)
1 onion
3 cloves of garlic
3 teaspoons of curry
Cook for one minute.
Add 1.25-kg sweet potato cubed
1 green apple
4 cups of vegetable stock
Cook until soft
Blend
Garnish with coriander.
